  7. Can it be kept out longer than one day (say a few days) to speed up the fermentation process a bit more, or is it best to put it in the fridge and be patient? I personally like very pungent kimchi.

    You might want to add some Yakult or other probiotic drinks (which also contains Lactobacillus bacteria) to add sweetness and flavor to the kimchi. That's what my friend shared to me.
